1. In a heated pan, sauté olive oil, garlic, onion. Add in spinach leaves then season with salt and pepper.
2. In bowl, smash in the cream cheese roughly then add in the sautéed spinach. Mix until fully incorporated. Flatten the mixture and topped with mozzarella cheese. Turn off heat, cover and wait until the cheese melts.
3. Transfer into a dipping bowl and garnish with parsley.
4. Serve in platters with plain SkyFlakes crackers.
